The Symphony of Salmon starter at the InterContinental Hotel, Johannesburg at OR Tambo is a trio of dishes – a salmon fishcake, a salmon spring roll and smoked salmon and prawn roulade – by Chef Yoshan Naidu.
The salmon spring roll was served on a mild curry sauce and the fish cake was spicy. The smoked salmon and prawn roulades were held together with a herbed cream cheese.
This starter was paired with the KWV Sauvignon Blanc 2013.
The tasting notes say: “This elegant and complex Sauvignon Blanc exudes aromas of limes and green apple with hints spice and subtle tropical undertones. The palate is lively and juicy with a crisp acidity and zesty, lingering finish.”
I definitely tasted the fresh green apples and limes. I thought it was a particularly fortunate pairing and enjoyed the wine immensely.
